I LOVE going to Zoe’s Kitchen to order their braised white beans and slaw! I mix the two together with a side of tomato soup and I’m in heaven. It’s a goal of mine to take my favorite meals from the restaurant to my kitchen. If you’ve had Zoe’s braised beans try the recipe below and let me know if we hit a home run!
This recipe does take a while to prepare. But a little effort goes a long way! Think of how much money you’ll be saving by making this at home. Braised white beans make an excellent meal on their own or a delicious protein packedside as well.
4 cans great northern beans drained but not rinsed
4 cloves garlic
1-2 sprigs fresh rosemary
1/4 c. olive oil plus 2 T
salt and pepper to taste
veggie broth, about 1 cup
Saute onion with 1/2 t salt with oil until soft, 5 minutes. Add the pressed garlic and cook until fragrant (about 1 min.) Add the un-rinsed beans, veggie stock, rosemary and 1/4 c olive oil. Cook on high until beans start to bubble. Turn the heat down and simmer with the lid for another hour. Keep your eye on it! Mash the beans with a spoon. Add salt and pepper. Stir, and place in a 300 degree oven for another hour. Enjoy with chips, pitas, over brown rice, or out of the bowl. Yum!
